A delicious treat for holidays, toffee popcorn is easy to make and everyone loves them.
- 1 cup butter
- 2 cups light brown sugar
- ½ cup corn syrup
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 cups of nuts (the traditional one are pecans and cashews)
- 10 cups popped popcorn
Preparation Step by Step
Step 1: Preheat the oven to 250 degrees.
Step 2: Pop the popcorn then set it aside.
Step 3: Over low heat, melt the butter, add the light brown sugar, corn syrup and salt.
Step 4: Keep mixing till the brown sugar has dissolved then turn up the heat so that the mixture boils. Let it boil for about 5 minutes.
Step 5: Remove the mixture above from the heat then add the baking soda and vanilla extract.
Step 6: Slowly pour the mixture over the popcorn. Toss the mixture so that it coats the popcorn. In case you want to add nuts, this is the moment to include them.
Step 7: Place the toffee popcorn on cookie sheets. Cook them for about 45 minutes at 250 degrees. (Tip: Line the cookie sheet with aluminum foil so that it cleans up easy.)
Of course you can go with air-popped or microwave popcorn, but if you really want delicious toffee popcorn, take into consideration using a stovetop popper with a bit of coconut oil. The stovetop popper can be successfully utilized not only for making toffee popcorn, but kettle or movie theater popcorn also.
